I want to be able to use this to help me make beats, do you have any idea how to do this?

Also how do I use the sampler? I don't understand it

You cannot record from the MIDI keyboard in Sound Forge. The sampler function is not actually a sampler, it allows you to transfer samples in from samplers via SCSI, edit them, and then transfer them back to the sampler.
