is there a way to prevent the wave display from constantly moving and instead the display moves to the next chunk when the playhead reaches the end of the display?

In the Windows version you can go to the Options menu and turn off "Scroll smoothly".

I don't know where this might be in the Mac version, if it even exists, but at least now you know what menu option to look for.
