How do you stop Acid from automatically putting my project on my desk top??

Options > Preferences > Folders on the menu bar (assuming for ACID Pro 7; not sure if ACID Music Studio has this option). You can set the default project folder or separate defaults based on media/element type. (Setting "Record" to "<Project>", for example, will save any recordings in the same folder where the ACID project is located...provided you save the project first, of course.)
