Assuming I've uninstalled AP7, am I able to legally transfer the license to someone else to use the software? I didn't see anything in the EULA that prohibited that (but I'm no lawyer, so I could have missed it)

Yes, but you will have to transfer everything over to the new owner and give Sony Creative his/her name and email address so that they can establish them as the new user.

Be sure to go through the proper channels. Do not just give them the software.
