I assume you've gone to the View menu and chosen those items to reopen them? If so but you still don't see them, you may have accidentally either a) undocked them from their usual place(s) and moved them to another docking area or b) resized them so small you don't notice them. Try closing other docked windows (using the same method as above, but uncheck them) until you see the ones you're looking for. Then go back and check the ones you actually want visible.

More recent versions of DVD Architect also allow you to save window layouts that you can recall later. This is helpful for quickly opening windows that you want to use and closing ones you don't, as a result keeping your work area clutter-free. This option, if applicable, is also on the View menu. If you don't see it there, then your version doesn't have it.

The trouble is, when I open the DVD architect program I have the fields and their content. As soon as I choose " file-new-single movie" and import the videofile to the project, the fields clears with the message:"No Themes/backgrounds available"

If you choose single movie then there are no menus and therefore no backgrounds. This is what should happen.
