The *only* option for standard DVD is MPEG2. Bitrate is what determines quality. Bitrate must be determined by the length of your program.

The length of my program is 1 hour and 3 minutes so what would the bit rate be on that?

Using the bitrate calculator in Ultimate S, it gives a length/bitrate of (rounded) of 9.4Mbps, but I'd avoid going over 9Mbps regardless.
this is of course, assuming normal menus, AC3 audio, etc.
I'd use the DVD Architect NTSC tempate, using either widescreen or not (depending on content) and select the Custom button. Then set bitrate to 8500,000 and leave it at that.
Render, and you should be very pleased.

Sorry about all the questions but I really want this to be perfect and I an new at all of this. Where do I change my project to 9mbps? And is this constant or variable?

When you render, choose MPEG2, select the DVD Architect template that is the best match (NTSC/PAL, Normal/Widescreen), then click the Custom button. In the Video tab of the custome window you choose the bitrate you want to use. For the length of your video a constant bitrate is probably acceptable.

I am assuming you mean 8,500,00 as the bitrate?
