Plug-ins add new capabilities to the host application that they plug into. The Audio FX plug-ins in ACID mimic hardware devices like compressors, limiters, reverbs, etc. and add those capabilities to ACID. Each plug-in processes the audio in some way. If you are not hearing a difference you may have them bypassed or you may just not be using them correctly.

What version of ACID are you using (4, 5, 6? Pro or Music Studio) and what plug-in didn't do anything?

Try adding a reverb to a track and set it to the Cathedral setting and you should definitely hear a significant difference in the sound.
