Recording digital audio is simply a matter of inserting an audio track, then arming the track for recording. Click the record button or Ctrl+R and record away.

You should be able to record what's coming in from the EM-1 provided you have your specific MIDI input enabled (Options > Preferences > MIDI) and chosen when you arm the track for recording.
