can your record a VSTi using a MIDI controller (keyboard) as a .wav file directly or do you have to use a MIDI track. I'd rather be able to use the VSTi as an actual instrument so to speak. the midi tracks tend to suck up resources.

You must record them as MIDI but you can easily render them as waves right after that. This is sort of a poor man’s track freeze.

What you do is record your MIDI track. Then solo it and press Ctrl+M to Render to New Track. Finally, mute the original MIDI track and what you are left with is the MIDI performance as a wave file.

You can even place them both in a folder (to keep them together) and then if you ever need to modify the performance, just delete the wave track, un-mute the MIDI track, change it and re-render it again.

Don’t feel foolish. There are always several ways to accomplish something in ACID and we don’t always realize them all. For example, I am so busy dragging and dropping loops on the time line, it was only recently that I discovered that you can double-click on a loop in the explorer and it will add a new track to ACID. I’m sure may people already knew this but had just never used that technique before. That is one tip you won’t see the Instant ACID book that I wrote with Iacobus, but there are lots of other good tips on how to record MIDI in there (hint, hint) ;-)
