Sure you can--they'll be recreated if you reload the .wav in SF again. I usually leave them alone until I'm done working with a file, then I delete the .sfk.

They are 'peak' data used to draw the waveform more efficiently.

If you never want them to stick around, select the "Delete temporary files on close" general pref and, if Sound Forge is the one that creates them, it will destroy them when they are no longer needed.

Not a good idea if you are also using ACID or Vegas on the same file set (they can all share the same .sfk, saving you some building time). If that's not the case, it might prove useful for keeping things clean.
