Is it possible to record my guitar in mono?

yes. when you hit the "record" button, another box will pop up.

the bottom of it will be a Drop Down box, select either left or right.

bam...on you go!

That's the answer... but to further the topic slightly, you can convert your existing stereo files to mono using Sound Forge's Channel Convertor. A bonus is that this'll halve the amount of disk space required for the sample.

And to further BFB's thoughts even more, you could also solo a track, use CTRL+M and then select a Mono option under "Template".

(Not quite as micro-featured as using Sound Forge's Channel Converter, but it can get the job done.)

Note, too, that track volume plays a big part when rendering to a new track. E.g., if a track's volume is set at -10.0 dB before rendering, the newly rendered track will also have a -10.0 dB cut plus whatever the newly rendered track's volume is set at, which is dictated by what the Preview fader is set at in the Mixer.
