How do I access the highs mids and lows in Acid?

I would start by doing some research and educating myself on music and audio engineering. I'm not saying you need a degree ... but your question just really leaves me speechless.

Nevertheless ... you are wanting to adjust your EQ settings. For that you will need to use one of the many EQ plugins that are available. You might want to look at the manual or the help files.

In a nutshell: Add any of the many types of plug-in EQ's available (either as an assignable FX in the Mixer or at the track level in the track list) and adjust accordingly.

As vanblah noted, be sure to check out the full ACID manual. (Online help is also available in ACID itself.)
