I am new to this, how do you instrument in the piano roll editor. When I look at
the Dls soft synth and see all the voices I want use them, but don't know how

Trackmaker,

Be sure you are using the latest update of ACID 4.0 from here and you should be able to just open the Properties page for the DLS synth and click on the voice you wish to use.
