How do I set SF5 to open all new files at 16 bit instead of 8?

Go to File>New on the menu bar, select desired bit-depth and sample rate and click OK. All new files should then be at that bit-depth and sample rate (when you click the "New" button on the standard toolbar).

Set new file spec in the record dialogue. Subsequent 'records' remember the last used setting.
