Since ACID allows me to compose my music, I assume that we can analize a song or CD to see what instruments or what kind of loops have been used to create the song or CD? If so what software does that?

None of them.
Acid is a MIDI composer. It's all 1's and 0's. There is no sound in a MIDI track. It's added later by a synthesizer or sampled loop.
The music on your CDs and iTunes is called audio. No analyzer can work at the depth you imagine. Extracting notes from a single line is a bit like OCR. Sometimes it works, sometimes it doesn't.
