sliding ALL footage one way or another...

If I finish a project and decide that I want to shift all the footage down a minute or two to add something else, is there a way to slide the entire thing down a couple minutes?

Select the INSERT TIME option.

Another option is to download the script "select from cursor" off of the all things Vegas site at VASST and run that. It selects everything on all timelines (except markers) and you can move it where you want. I end up using that script during almost every edting session at least once. Click on Edit, Select, Select All, then slide or do whatever else you want to do to all tracks.
I sometimes use it example to reduce the volume of all my tracks a few db.

If you have any envelopes make sure you click the " Lock Envelopes to Events " button before moving.
