Is there a way to take a frame of your video to use as your menu background?

Yes, within Vegas there is an icon near the "viewer" of "save snapshot to file". Before using it, make sure to undock the window and set the view setting to highest quality and make image as large as possible, then click the button and save the file. You'll have a copy of the image that you can set as a background.

The above is from memory, but I'm pretty sure this is correct.

in the old version of dvd architect 1.0 there was a simple click button that would insert a video frame as the background for the button. did they remove this feature in dvd arch 2.0? this was such a handy feature.
