We've done lots. You can imports it as .png, I have my wife write it and then I scan it.
Or you can just type it into say Wordpad and cut and paste the text straight into Vegas text generator or DVDA for menus. The standard Unicode set has 36,000 text characters. Win2K and XP provide a number of ways to enter chinese. Quite well done really. My wife who has no PC skills picked it up very quickly.
There's also a number of programs around to make the text input easier such as NJStar.
Sadly not all applications seem Unicode enabled, the Epson PrintCD being one and Nero is another. You can get around this to some extent by loading the text into PS and exporting a graphic file.

The V4/V5 Character generator can accept Chinese characters without problem; the only requirment is that you have Chinese TT fonts installed in your system and you have Chinese ime enabled in Windows. You can even enable Chinese ime in English version Windows (Win 2K and up). Actually Vegas is one of a few English native programme that will handle double byte characters correctly.
